Ki.itsu (帰一) is from Zen words “Banpouichinikisu (萬法帰一), which means “return to the origin”. Ki.itsu pays tribute to their sake brewing philosophy by producing a very small batch each year using Kimoto method, selecting only the perfect produce, letting them age in controlled 5℃ temperature and bottling only upon a 5 years (at least) maturity for optimum taste. Ki.Itsu is rank amongst the ultra-premium sake due to the special technique involved and its rarity.
