SEASON II of this prolific collaboration among 7 Breweries from Miyagi Prefecture sees the induction of Urakasumi, in place of Miyakanbai.

Episode I starts off with a fresh spin, with 2 Host Breweries; highly acclaimed Urakasumi & Koganesawa, helmed by Miyagi's most prominent female Toji, Yuri san.

The original band of 7 breweries came together in the midst of their re-construction efforts after the great Tohoku earthquake in 2011.

7 represented 7 colours of the rainbow, offering hope amidst deeply challenging adversity.

As with previous editions, the sake brewing process was carved out into  parts and each of the seven breweries was assigned their respective roles.

Koganesawa Style (Pink Cap)
Feminine sensitivity & youthful exuberance  is clearly celebrated in Yuri-san's expression.  With the use of Date 7 Miyagi Kobo,  aromas of fresh berries allude to  vivid acidity on the palate with hints of graceful sweetness.  Whimsical when matched with fresh seafood.

Urakasumi Style (White Cap)
The expression of Urakasumi house yeast, Kyokai no.12 takes centrestage in this classic yet elegant brew.  Gentle ginjo aromas of fuji apples & strawberries are evident.  Balanced acidity, sweetness and umami on the palate.  We would recommend having this bottle over a thoughtfully curated edomae sushi experience.
